That's easy. On number one, 1 1/4 is a fourth of 5, so you do the same with 2 1/2.

Think of it this way:

1 1/4 5

--- -

2 1/2 x

Also for 2, you take the amount of HC needed for 1 batch and then divide it by 2 / multiply it by 2.
